Abstract: With the aim of evaluating the initial maturity stage of wheat Tritucum durum and Barley Hordeum vulgare of the grass family, known as (frik and mermez) respectively, from a nutritional and therapeutic standpoint, we studied a comparison between it and the full maturity stage for them. The study included estimating the chemical content and antioxidant activity of the grains of both plants through chemical detection. It was revealed that wheat and barley contain phenols, flavonoids, tannins and triple terpenes, sterols and the refining compounds, while we recorded the absence of alkaloids in all the studied samples and through the quantification of the nutritional value ( The results of the primary metabolism) showed the superiority of wheat grains in the initial ripening phase with carbohydrates by a value of 100.66±3.8mg/g on the rest of the samples, and the results of the fat estimation showed the superiority of ripe barley grains by a value of 32.22±5.09 mg/g on the rest of the samples, as well as the quantitative estimation. For proteins, the barley grain during its initial ripening was superior to 0.89±0.04mg/g on the rest of the samples, over the rest of the samples. With regard to the secondary metabolism, the results of the estimation gave the highest value of the polyphenol content at the infusion of the dry matter infusion of barley in the initial ripening phase with a value of 3.23±0.016mgEq AG/gMS surpassing the rest of the samples, as for the flavonoid content, the highest value was at the leaching of the dry matter infusion of barley in the initial ripening phase 68.07±4.35 mgEqQ/gMS, Our study also included testing the antioxidant efficacy by testing the free root inhibition of DPPH• which showed the superiority of the effectiveness of primary barley by the value of IC50=16.49 ±0.43µg/ml As for the return capacity (FRAP) results, the return capacity of mature barley was superior to the value of EC50 =1.02±0.05 mg/ml over the rest of the samples. Finally, we concluded the preference of the nutritional value of grits over ripe wheat and a relative preference of ripe barley over the cod. As for the therapeutic aspect, we observed a relative preference for ripe wheat and barley over frik and mermez.
